I still do have a queue of “to bake” however I’m just not in the mood to bake. But ripe bananas call for some serious decisions. Compost? Freeze? Nah, bake muffins.
So I baked some muffins for the husband. These Vegan Spelt and Oat Banana Muffins are super easy. The hardest part is remembering if you have spelt flour in your cabinet and if you should wait until morning to take a photo. So the answers are yes, I have spelt flour, and no, I can’t wait on a photo. So sorry about that.
