We’re on our way to Australia tonight so of course I bought bananas a few days ago. Oopsie. Thank goodness for a tasty recipe like Chocolate Banana Muffins with Cookie Dough Streusel Topping
It was easy to veganize with margarine. I was lazy and used ener-g egg replacer for the egg and things turned out great. My streusel might have had more brown sugar in it which made it darker. Unsure, or the copious amount of chocolate chips. Either way they got a rave review from the husband and his coworkers.
