I’ve been neglecting my bananas I keep on buying at home. I tend to bake a lot with them but since I’ve been making cookies they haven’t really been used up. I have some bananas that were desperate to be put into a recipe so I found one for Gluten-Free Banana Bread Cookies with Cream Cheese Frosting.
I’m not really sure these should get lumped in with cookies since they are so soft but I’ll take it on a technicality. The flavour is full of banana and the frosting really makes it like banana bread. Since the recipe isn’t vegan I ended up using an egg replacer for the egg and agave nectar in the frosting. I ended up using gluten-free all-purpose flour since it was at the front of my cupboard. These were a nice cake-like change, even though I have less than a week left I’m getting kind of burnt out on cookies.
